Welcome to the gateway of Andalucía,

Jaén.

Welcome to the Dama Juana, named for Juana “la Chucha”, my grandmother.  She was a traditional tireless hardworking woman from Valdapeñas de Jaén, a small town of the Sierra Sur or southern mountains of the province.  She was also an incredible cook.

Through our menus, I want to transmit the experiences that I shared with her, our conversations, achievements, and stories, and I want to transmit them through the rediscovery of the traditional flavors of the country, the mountains, the vegetable gardens, and the confection of meats of the Sierra Sur.

It is not my intention to invent anything, but instead it is to humbly help you to discover the simple honest cuisine that my grandmother passed down to me: a cuisine born from the poverty, scarcity and suffering of life in the Spanish countryside during most of the 20th century.

Without a doubt, who I am has been marked by the Sierra Sur,

Valdepeñas

where I grew up, the now abandoned town of 

Otiñar

where I learned to be inquisitive

the farm “La Parrilla” 

which marked my path

and above all else my grandmother

who infused me with a love of cooking.

 

For all these motives, the Dama Juana is my way of paying tribute to her, her memory and their role in making me who I am today.
